  • 1 cup grated Parmesan cheese Can substitute with Pecorino for a sharper taste.

Preparation

  • Warm the olive oil in a large pot over medium-high heat until it shimmers.
  • Add sliced sausage, chopped onion, and diced bell pepper; sauté until browned, about 5-7 minutes.
  • Stir in minced garlic and cook for 1 minute until fragrant.
  • Pour in diced tomatoes (with juices), chicken broth, and heavy cream. Add Cajun seasoning, paprika, salt, and pepper; bring to a gentle boil.
  • Stir in uncooked penne; cover and simmer for 10-12 minutes, stirring occasionally.
  • Once pasta is tender and sauce thickens, remove from heat and stir in grated Parmesan until melted.

Notes
