  • 1/2 cup garlic butter, melted Can make your own by mixing softened butter with minced garlic.
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Use whatever you have; frozen or fresh works!
  • 1 teaspoon Italian seasoning Provides an aromatic touch.
  • to taste Salt and pepper Adjust according to your palate.
  • 1/4 cup chopped fresh parsley Adds a fresh burst of flavor.

Preparation

  • Place the chicken breasts at the bottom of the crockpot.
  • Drizzle the melted garlic butter over the chicken.
  • Add the mixed vegetables on top.
  • Sprinkle the Italian seasoning, salt, and pepper across the layers.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • When done, garnish with fresh parsley before serving.

Notes

Serve over rice or mashed potatoes, with a side salad or crusty bread. Spice it up with red pepper flakes before serving. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
