  • 4 oz Cream cheese Can use low-fat version.
  • 1 cup Dill pickles, chopped Use classic dill pickles or sweet gherkins.
  • 1/4 cup Dill pickle juice Enhances the dill flavor.
  • 1/2 cup Sour cream Greek yogurt can be used as a substitute.
  • 1 cup Cheddar cheese, shredded Sharp cheddar recommended.
  • to taste Salt Add gradually.
  • to taste Pepper Add gradually.

Preparation

  • Cook the pasta according to package instructions until al dente.
  • Drain and cool the pasta under cool water.
  • In a mixing bowl, combine the cream cheese, sour cream, and dill pickle juice. Beat until smooth.
  • Add the cooled pasta, chopped dill pickles, and shredded cheddar cheese to the bowl.
  • Season with salt and pepper to taste.
  • Mix gently until everything is well-coated with the dressing.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

This salad is versatile; you can add protein or different veggies like bell peppers or red onions. Leftovers last 3-4 days in the fridge, but it's best enjoyed fresh.
