  • 8 oz pasta (spaghetti or fettuccine) You can use either spaghetti or fettuccine—whichever you have on hand.
  • 4 cloves garlic, minced Fresh garlic is essential for robust flavor.
  • ¼ cup unsalted butter Using unsalted allows controlling the seasoning.
  • ½ cup grated Parmesan cheese Freshly grated for maximum flavor.
  • Salt and pepper, to taste Season to your palate.
  • Fresh parsley, chopped, for garnish Adds a fresh kick to every bite.

Preparation

  • Bring a large pot of salted water to a boil.
  • Cook the pasta until al dente, about 8-10 minutes, making sure to reserve half a cup of pasta water before draining.
  • While the pasta cooks, melt the butter in a skillet over medium heat until fragrant.
  • Sauté the minced garlic for 1-2 minutes until golden brown.
  • Add the drained pasta to the skillet and toss to coat in the garlic butter.
  • Stir in the grated Parmesan until melted. If the sauce is dry, add a splash of the reserved pasta water.
  • Season with salt and pepper to taste, then garnish with fresh parsley and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze in smaller portions for up to 2 months, omitting garnishes before freezing.
