  • to taste salt and pepper Season to taste for the best flavor.
  • 1 cup black beans, rinsed and drained Provides a good source of protein.
  • 1 cup corn Can be frozen, canned, or fresh.
  • 1 cup diced tomatoes Fresh is best, but canned works too.
  • 1 whole avocado, sliced Squeeze lime on slices to prevent browning.
  • ½ cup shredded cheese (like sharp cheddar) Pepper jack can add a spicy kick.
  • to taste crushed tortilla chips or Fritos for topping Any crispy snack can be used.
  • for garnish fresh cilantro Adds a bright touch.
  • for serving lime wedges Squeeze lime at the end for brightness.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash the russet potatoes thoroughly, then dice them into bite-sized cubes.
  • In a large bowl, toss the diced potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until they’re well-coated.

Cooking

  • Spread the seasoned potatoes on a baking sheet in a single layer.
  • Roast the potatoes for about 25-30 minutes, flipping halfway through.
  • Check for fork-tenderness and ensure they are crispy and golden.

Assembly

  • In a serving dish, layer the crispy potatoes, followed by black beans, corn, diced tomatoes, and cheese.
  • Top with sliced avocado and a handful of crushed tortilla chips.
  • Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

Store leftovers in an airtight container for up to three days. Reheat in a hot skillet for best texture. Freezing is not ideal; separate components if necessary.
