  • to taste salt and pepper Season generously for best flavor.
  • parsley For garnish before serving.

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Season chicken with salt and pepper; brown for 4-5 minutes on each side.
  • Add minced garlic; sauté for about a minute until fragrant.
  • Stir in rice; toast for 1-2 minutes.
  • Pour in chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer for 18-20 minutes.
  • Stir in Parmesan cheese until melted.
  • Garnish with chopped parsley before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days. To reheat, add a splash of broth to maintain creaminess. Can be frozen for up to 2-3 months; thaw overnight before reheating.
